Harlan County Meat Processors offers carcass Beef and Pork processing for a wide variety of customers including beef and hog producers. Keep in mind we are very busy with hogs so we slaughter hogs every 3 weeks. On hogs we cure the old fashion way with brine and salt then set for a time this will take up to 3- 4 weeks to do hog processing. This has been a very popular process with all our customers. Beef Processing we age your beef up to 21 days unless specified by the producer. We also wrap with plastic and then paper. We also can vacuum seal your items if specified

Appointments

Local producers can call Harlan County Meat Processors to set up an appointment for the slaughter of their animal. The schedule is usually booked up 2 to 4 weeks in advance, so please call as soon as possible. Also keep in mind that during the middle of October to mid December we are very busy with deer season we won't slaughter for approximately 8 weeks to allow time to work on venison. Purchase

Unfortunately since we are a custom exempt locker plant and are not federally inspected, you cannot purchase hogs or beef from us. However we can recommend many local producers that can fill your needs. The local producer can then call us and set an appointment for slaughter.

Cost and Quantity

The amount of take-home beef and cost per pound of the beef in the freezer are two important considerations for potential beef buyers. Beef is often advertised and sold on a "hanging weight" basis. This term does not refer to take-home beef. In processing, there is a considerable amount of cutting loss. It is not unusual to have 30 to 45 percent of the hanging weight of a carcass or side as cutting loss.

This means that if a side of beef weighs 300 pounds hanging weight, there would be only 165 to 210 pounds of beef in terms of trimmed retail cuts for the freezer. Assuming 35 percent cutting loss, 300 pounds x 35 percent =105 pounds of fat, bone, shrink and other losses. And, 300 pounds - 105 pounds = 195 pounds of take-home beef.

These figures vary greatly depending on your cutting instructions. At Harlan County Meat Processors, we strive to give you the best finished product possible. This means we cut away any excess bone and fat that is of no use to the consumer. This practice makes for a great end product. While it does reduce the actual weight of product that you take home, we do try to keep the cost low. In carcass processing, we feel that quality is most important.

Retail Meats
 We have a great variate of meats and Sausages that can be purchased at Harlan County Meat Processors. We are very well known for or Bratwurst and our Pizza line we do. Our jerky and sticks have been very popular as well. We also do some small catering. Our Prime Ribs are very popular for the Holiday seasons and you must order them in a week or two advance to make sure you get one. Our Cooked Roast Beef and Cooked Roast pork are great for Graduations, Weddings and other Family events. Pulled Pork and Brisket are another hot item we have been selling and we ask if you order these items again a week or two in advance is the only way to get them.

Deer Processing
Is a very busy time of year as we are putting long hours in to give you the best items as possible. We like seeing all our wild game hunters year end and out. We have a very large selection of items 20+ to chose from to process your deer. We try to give back your deer in a timely manner. It all depends on what you have made and the time it takes to get back items. We will call or send a post card back to you when your deer is all complete. We would like to see all of you during Deer season so stop in and give us a try. We are also a proud participant in the Game and Parks Hunter's Feed the Hungry program.
